Monitoring vacuum with manifold gauges

A contractor was installing new HVAC system yesterday, and his vacuum setup looked like this, i.e. just a vacuum pump and manifold gauges. Didn't pull valve cores, just hooked it up like in the picture, fired up the pump and let it running.

I was seriously puzzled because my understanding was that there should be micron gauge as close to the valves as possible, it should all be pumped down to 500 microns and then monitored for 10 mins or so with the pump isolated and shut down. To my questions everybody's response from the crew was that this is how they do it all the time, and "Look, see how this arrow on the blue gauge is in the green? It means that there is vacuum".

IDK, the way how they claimed that this is a 100% correct procedure totally threw me off. I'm not an HVAC pro, so my best response to them could only be "but, but, this is how they say they do it online", which I didn't even attempt due to its utter ridiculousness. The contractor is well versed in every other area and did a great job of installing the equipment, which makes me question if I'm the stupid one here.

In the end they were running out of time, so filled the lines back with nitrogen and left for the day. But what am I to do now? Just let them finish the job "the way they do it all the time" because that's how it can be done or what??
